A factory tour of Kirin Brewery

Are you a beer person
If you are, you should visit ‘Kirin Brewery’ in Okayama City


Kirin is one of the biggest breweries in Japan, and its symbol mark Kirin (it’s an imaginary animal in China) is familiar to Japanese people.

The factory tour takes place every day except Mondays.
It starts every 30min at weekdays, every 1hour at weekends and holidays.
You need to make a booking for the tour on the phone in advance

In the tour, you would learn all about Kirin beer!
What’s more, you can taste some beer at the end of it


It takes 40min by car from Okayama station to Kirin Brewery.
The size of the factory took us by surprise...It’s huge

At the entrance, I saw a Christmas tree (?) made of beer cans
Also we made friends with a man (figure) wearing Kirin jacket

At the reception, you can get the leaflets.
There are 4 languages, Japanese, English, Chinese, and Korean


We followed the tour guide, and we watched the video about the history of the company and products.

Next, we learned about an ingredient of the beer, hops.
Hops are parts of dried flowers and they are used to give the beer a bitter taste and an aroma.
It’s essential for the beer

I split a hop, and smelled it.
It’s fresh and strong. The scent of it remained in my fingers for a while.

Of course, other raw ingredients such as malt, water, and yeast are also carefully selected.
For instance, this brewery is using clean and pure water from Yoshii river in Okayama.


After that, we had a look around the factory
From what I've heard, the process of making beer is …
1 Malting
2 Brewing
3 Fermentation
4 Storage
5 Filtration
6 Canning / Bottling / Barrelling / Printing Inspection
7 Crating / Casing
8 Shipping 


This is a brew kettle. It’s about 7-8m high, huge like a building

Ground malt and hot water are put in it, and boiled.
Then it’s filtered to make wort.
The wort coming out first is calledIchiban shibori (the first wort)’, and the rest called Niban shibori (the second wort)’.


Those tanks are for fermentation and storage.
Each tank is 25m high, and it can keep 1 million and 50thousand of cans (350ml) of beer!

The cooled wort and yeast are kept at low temperature (about 0 degree) in the tank.
In 1-2months, a balanced flavor and aroma are developed. 
 


The next steps are Canning, Bottling, Barrelling!
It was going on in the different place, so we headed there by bus since this factory is enormous

In 5min, we arrived there.
At the entrance hall, we saw the label of Kirin beer displayed.

The tour guide told us that this label has a trick
In this label, three Japanese Kana letters ‘ki’ ‘ri’ ‘n’ are hidden. Can you see them

I like that sense of fun


We went upstairs to see the packaging process.
Some parts of beer cans were displayed so that we could learn how they were made.

That machine is ‘can filler’.
It fills cans with beer, and seal cans with lids quickly preventing any air mixed in.

The machine was working so fast  In fact, it can fill 2000cans per one minute.


We came across tiny beer cans (135ml).
Those cans are only produced in Okayama, and transported all over Japan.

If you feel like shopping, you should stop by the shop in the factory

I recommend ‘Ichiban shibori beer jelly chocolate’
It has beer jelly inside, really good.

Also you can’t buy it outside of the factory as it’s a limited item!

Before tasting the beer, shall we learn a bit more about Japanese beer

In Japan, beer is classified into 3 categories.
Beer : more than 68% of the ingredients is malt
Happo shu: brews made of malt and other adjuncts
         Less than 67% of the ingredients is malt
New genre : beer-flavored beverages


Then, shall we have a taste
You can have a maximum of three glasses of beer

I tried ‘Kirin ichiban shibori’ and ‘Ichiban shibori STOUT’.

‘Kirin ichiban shibori’ is only made of malt and hops, not using other ingredients like rice, corn, starch etc.
Moreover, it only uses the wort coming out first (Ichiban shibori).
Apparently, the mass-produced beer using Ichiban shibori wort is really rare in the world.


It’s up to my expectation Extremely tasty

‘Kirin ichiban shibori’ is fresh and mild.
‘Ichiban shibori STOUT’ is fragrant and it leaves a bitter taste in the mouth.
I liked both, but if I had to choose one, I would choose ‘Kirin ichiban shibori’


After that, we learned the best way to serve beer

From 30cm above the glass, pour the beer.
Do it slowly at first, then faster, and fill the glass with the froth.

Wait a minute until the froth fade to the half of the glass.
When you’ve got a 50:50 ratio between the head and the body, add more beer.
Pour the beer slowly until the head comes to the top of the glass.

Wait a while, and add a little more beer until the head is just 1.5cm above the rim.
The beer should have a 70:30 ratio between body and head

You would enjoy perfect beer at home.
It needs time, but it worth trying
